Energizing No-Bake Pistachio & Matcha Green Tea Bliss Balls

These No-Bake Pistachio & Matcha Green Tea Bliss Balls are perfect to brighten up your day! They have a vibrant green colour and are packed full of energy and health benefits.

Matcha green tea powder is known for its antioxidants which boost metabolism, and raise energy levels. Just half a teaspoon of matcha green tea powder contains 137 times more antioxidants than a cup of standard green tea.

Matcha helps the body release energy slowly, so a little bit of matcha can help you feel energized for longer.

These delicious matcha bliss balls should give you that little pick-me-up - and boost your antioxidants, too!

Ingredients:

Makes 20 Balls

  • 1 teaspoon Green Matcha Tea Powder
  • 1/2 cup raw cashew nuts
  • 2 x 20ml tablespoons almond meal
  • 1/2 cup unsweetened desiccated coconut
  • 2 x 20ml tablespoons coconut flour
  • 2 x 20ml tablespoons rice malt syrup
  • 2 x 20ml tablespoons water
  • 1 x 20ml tablespoon extra-virgin coconut oil, melted
  • 1/4 cup shelled pistachio nuts, chopped

Instructions:

  1. Mix together the cashew nuts, almond meal, desiccated coconut, coconut flour and matcha in a food processor, until it reaches fine crumbs.
  2. Pour in the water, rice malt syrup and coconut oil, and mix well. It should be sticky enough to hold together, and be able to form the balls. If the mixture is too sticky, you can add a little bit more coconut flour. If it’s too dry, add a few drops of water.
  3. Roll the mixture into around 20 balls, and then roll them in the chopped pistachio nuts, to give them a firm coating. Pop the balls in the fridge to set, and store in an airtight container.
  4. Enjoy!
